Protected as a Geographical Indication for the island of Ireland. Must be mashed, fermented, distilled, and matured in wooden casks in Ireland for ≥3 years; bottled at ≥40% ABV.
Categories
- Single Pot Still: mix of malted and unmalted barley, pot still, single distillery.
- Single Malt: 100% malted barley, pot still, single distillery.
- Single Grain: typically column‑distilled grain whisky, single distillery.
- Blended: blend of two or more of the above.
Style Factors
- Typically lighter/fruitier; often triple‑distilled (not mandatory).
- Cask program: ex‑bourbon, sherry, wine; finishes common.
Flavor & Use
- Range: orchard fruit, honey, vanilla, baking spice; some peated outliers.
- Cocktails: Irish Coffee, Whiskey Sour, Highball.
